Happy New Year! It’s Holli Singleton, your MESH spokesperson here wishing you a safe and prosperous 2018! As usual, my family celebrated the New Year by eating! And it’s the same every year—Grandmamma cooks the ham and my sisters and I bring the rest—collard greens, black-eyed peas, cornbread, deviled eggs, peach cobbler and pants with elastic waists!

But this year, smack dab in the middle of the Chinet plates and red Solo cups, was a salad. A fancy salad of baby spinach, walnuts and blue cheese crumbles. It seems one of my sisters went all healthy on us and added a green vegetable to the menu!

Well, grace was said and the eating began! Dishes were passed and plates were filled, but the salad sat there. Second helpings made the rounds and when everyone was satisfied, the salad still sat there—not a blue cheese crumble out of place. A centerpiece, rather than a side dish.

Next year, if she wants to add something green to the table, I have a lime Jell-O recipe I can suggest…
